Doodh Sev ki Sabji Recipe / दूध सेव की सब्जी रेसिपी

Ingredients / सामग्री:

• 1 cup Sev (thin gram flour noodles) / १ कप सेव (पतली बेसन की नूडल्स)
• 2 tablespoons Soyug Gold Refined Soyabean Oil / २ बड़े चमच सोयुग गोल्ड रिफाइंड सोयाबीन तेल
• 1 teaspoon Cumin Seeds / १ छोटा चमच जीरा
• 1 Onion, finely chopped / १ प्याज, बारीक कटा हुआ
• 1 Tomato, finely chopped / १ टमाटर, बारीक कटा हुआ
• 1 Green Chili, chopped / १ हरी मिर्च, कटा हुआ
• 1/2 teaspoon Turmeric Powder / १/२ छोटा चमच हल्दी पाउडर
• 1 teaspoon Red Chili Powder / १ छोटा चमच लाल मिर्च पाउडर
• 1 teaspoon Coriander Powder / १ छोटा चमच धनिया पाउडर
• Salt to taste / स्वाद अनुसार नमक
• 1 cup Milk / १ कप दूध
• Fresh Coriander Leaves, chopped for garnish / हरा धनिया, सजाने के लिए कटा हुआ

Instructions / निर्देश:

सेव मिश्रण तैयार करना (Preparing Sev Mixture):

1. Heat Soyug Gold Refined Soyabean Oil in a pan. Add cumin seeds and let them crackle.
   पैन में सोयुग गोल्ड रिफाइंड सोयाबीन तेल गरम करें। जीरा डालें और उन्हें फुटाने दें।
2. Add chopped onions and sauté until they turn golden brown.
   कटा हुआ प्याज डालें और सुनहरा होने तक भूनें।
3. Now, add chopped tomatoes and green chili. Cook until tomatoes are soft and mushy.
   अब, कटे हुए टमाटर और हरी मिर्च डालें। टमाटर नरम और गूद़े होने तक पकाएं।
4. Add turmeric powder, red chili powder, coriander powder, and salt. Mix well.
   हल्दी पाउडर, लाल मिर्च पाउडर, धनिया पाउडर, और नमक डालें। अच्छे से मिलाएं।

दूध और सेव डालना (Adding Milk and Sev):

1. Pour milk into the pan and mix everything well. Let it simmer for 2-3 minutes.
   पैन में दूध डालें और सब कुछ अच्छे से मिलाएं। इसे 2-3 मिनट के लिए धीमी आंच पर पकने दें।
2. Add sev (thin gram flour noodles) and gently mix until the sev is well coated with the mixture.
   सेव (पतली बेसन की नूडल्स) डालें और धीरे से मिलाएं जब तक सेव मिश्रण से अच्छे से ढक जाए।

सब्जी पकाना (Cooking the Sabji):

1. Cover the pan and let the sabji cook on low heat for about 5-7 minutes, stirring occasionally.
   पैन को ढक दें और थोड़ी देर के लिए धीमी आंच पर सब्जी को 5-7 मिनट तक पकने दें, कभी-कभी चलाते रहें।
2. Check for the consistency of the gravy. If it’s too thick, you can add a little water or more milk to adjust.
   ग्रेवी की गाढ़ाई की जाँच करें। अगर यह बहुत गाढ़ा है, तो आप थोड़ा पानी या अधिक दूध डाल सकते हैं ताकि समायोजन किया जा सके।
3. Once the sev is soft and cooked, turn off the heat.
   जब सेव नरम और पका हो जाए, तो आग बंद करें।

सजावट और परोसना (Garnishing and Serving):

1. Garnish the Doodh Sev ki Sabji with chopped fresh coriander leaves.
   कटा हुआ ताजा धनिया पत्तियों से दूध सेव की सब्जी को सजाएं।
2. Serve hot with roti or paratha.
   गरमा गरम रोटी या परांठे के साथ परोसें।
